Our Creations

Berry Buerre Blanc

  • 1 qt Blueberries, Raspberries or Boysenberries
  • 3 tbsp Fresh Thyme
  • 2 tbsp Fresh Tarragon
  • 2 tbsp Dry Marjoram
  • 1 qt White Wine
  • 1/2 ea Onion, minced
  • 4 tbsp Sugar
  • 1/4 lb Butter
  • 1/2 oz Clarified Butter
  1. Heat Pan and add 1/2 oz clarified butter, then add in minced onions and berries
  2. Sweat berries, sugar and onions until berries release their juice
  3. Add in White Wine and Herbs
  4. Reduce until only 1/2 cup of liquid remains
  5. Whisk in 1/4 lbs of butter or hold reduction to serve and mount in butter to order
