Our Creations

Bermuda Fish Chowder
Serves: 8 servings

  • Real Fish Stock
  • Smoked Bacon, Diced & Rendered
  • 2 Onions Chopped
  • 1 Pepper Diced
  • Chicken Stock
  • 1 - 16oz. Chopped Canned Tomatoes
  • 2 tsp. Tomato Paste
  • 2 Garlic Cloves
  • 2 Bay Leaves
  • 1 Sprig of Thyme
  • Fresh Cracked Pepper
  • 4 tsp. Chopped Parsley
  • 2 Med. Potatoes- Peeled & Diced
  • 2 Med. Carrots- Diced
  • 2 tsp. Worcestershire
  • 1 tsp. Curry Powder
  • ¼ tsp. Hot Sauce
  • 3 tsp. Lime Juice
  • ¼ Cup Sherry
  • 1-2# Fish Filets
  • Salt to taste

Basically, after you have rendered down your bacon start adding all of your vegetables that need cooking followed by the remaining ingredients. You can stew your fish or conch just before you finish. I usually, add the fresh herbs at the end along with the lime juice. You have to add lib on the rest. This creation is a brothy vegetable fish chowder. The combination of these ingredients makes it the best I've tasted. You can add cilantro, minced chilies & scallions for garnish for a Latino flavor that I particularly like.
